The main advantage is logistics: a packed kayak fits in the boot and you do not have to worry about where to store it at home.
The trade-off is rigidity, which dictates how well the boat tracks. Therefore, always inflate to the recommended pressure; a soft kayak bends in the middle and is miserable to paddle. A simpler model is enough for a calm lake, but for rapids look for a self-bailing floor and more durable material. With two-seater models, check if they can be paddled solo when your passenger drops out.
