You can estimate the length easily: stand on level ground and hold the pole under the grip, your elbow should form roughly a right angle.
Shorter ones are handy on the ascent, longer ones on the descent, which is exactly why telescopic ski poles are worth it for ski touring, as you can adjust them without taking off your gloves. Large snow baskets belong in powder; small ones will sink through and you will have nothing to push against. A grip with an extended handle allows you to hold the pole lower on a traverse without having to shorten it. You will appreciate a quick-release strap in avalanche terrain.
